The link between diet and disease is not a new one. Research indicates fruits and vegetables reduce the risk of major chronic diseases such as heart disease, diabetes, and cancers. In the past three decades, changes in the eating and exercise habits of children have contributed to the dramatic rise in childhood obesity.
Overweight and obesity are known to promote an increase in morbidity, socio-economic disadvantage, decreased educational attainment, as well as it harbors negative emotional connotations and stigmatization.
The earlier children begin eating a nutritious diet rich in fruits and vegetables, the greater their chances of staying healthy for life. Many cancers, diabetes, obesity, and heart disease can be avoided if healthy eating and lifestyle practices are established in childhood.
Advocating and coordinating efforts to promote healthy behaviors in children is a worthy effort that is often found in the hands of women. Mothers have a unique opportunity as agents of change to model healthy food preferences and lifestyle habits in the lives of their children. Furthermore, faith-empowered mothers are a transformational force to reach beyond the lives of their own families and influence entire communities.
The curriculum aims to empower children with the knowledge and skills they need to establish healthful habits and to carry them well into adulthood.
The Eat MORE RAINBOWS Junior Chef program helps young minds to grasp the value of healthy dietary choices and lifestyle behaviors through the eight laws of health and optimum nutrition in a way that reinforces learning on many levels. Our culinary program offers children the skills they need to feel confident in the kitchen, as well as to familiarize them with new tastes and a rainbow of plant foods.
We take the children through God’s Amazing 8, a special health plan that includes eight amazing natural healers that can help protect cells and keep them healthy. God’s Amazing 8 provides a RAINBOW of protection to help cells be safe, clean and super-energized! The lessons are reinforced kinesthetically—through the senses of the eyes, the taste, the touch, and smell—and will leave a lasting impression through its collective experience. It has been shown that these hands on approaches enhance student engagement in abstract scientific concepts and learning development.
